Roasted Vegan Spanish Potatoes

This recipe for  Spanish Potatoes is full of rich tomato flavor.  The potatoes are baked and not fried, making this a healthy weeknight side dish.

Ingredients:

– Yukon gold potatoes – tomato paste – olive oil – smoked paprika – dried garlic – sea salt – ground black         pepper – lemon, juiced – fresh parsley

Step 1

Preheat oven.   Scrub, dry & chop potatoes and  place in a bowl.

Step 2

Combine coating ingredients  in a bowl.  Stir to coat potatoes.

Step 3

Spread in a single layer on a parchment-lined baking sheet.

Step 4

Roast until crisp. Toss with lemon juice & parsley.  Serve hot.
