Healthy  Gluten-Free Sweet Potato Bread

This delicious Gluten-Free Sweet Potato Bread is so delicious and moist. You can toast it and serve it as an easy side dish or dessert.  This healthy bread recipe is vegan-friendly as well, using flax eggs or chia eggs.

– nonstick cooking spray – sweet potatoes  – eggs – coconut oil – unsweetened          applesauce – unsweetened almond          milk – vanilla extract – gluten-free flour – coconut sugar – baking soda – ground cinnamon – sea salt

INGREDIENTS:

Mix together cooked sweet potatoes, eggs, coconut oil, applesauce, almond milk & vanilla.

In a large mixing bowl, combine flour, coconut sugar, baking soda, cinnamon & salt.  Stir to combine.

Combine the wet & dry ingredients and pour into a loaf pan. Bake until the top is golden brown.
