This Strawberry Beet Smoothie is a delicious and nutritious way to start the day. This recipe is dairy-free and vegan, but is so creamy and satisfying. You can’t taste the beets in this sweet smoothie.

  • Total Time: 7 minutes
  • Yield: 2 1x

Ingredients

Units Scale
  • 1 cup unsweetened almond milk
  • 2 frozen bananas, broken into pieces
  • 1 cup frozen strawberries
  • 2 large cooked beets, cut in half
  • 1 tablespoon almond butter or peanut butter
  • 1 scoop protein powder (optional, for added protein)

Instructions

  1. In the base of a high speed blender, combine the almond milk, banana, beets, strawberries, almond butter, and protein powder, if using.
  2. Turn on high and process for 30 seconds, or until the smoothie is thick and creamy.
  3. Serve immediately, or cover and refrigerate for up to 24 hours.

Notes

  1. It’s always good practice to layer your ingredients into the blender with the liquids on the bottom. This will help the motor run efficiently.
  2. Feel free to use whatever nut butter or seed butter you like, including cashew butter, peanut butter, pumpkin seed butter, or whatever you like.
  3. To make this Strawberry Beet Smoothie a balanced meal, try adding a scoop of collagen protein to this recipe to help balance the macronutrients. If you are vegan, try this unsweetened vegan protein powder. You may also want to check out my list of the best clean protein powders or the best protein powders for pregnancy.
  4. You can also use beet powder instead of fresh beets, if you prefer (you’ll need about 1 tablespoon of beet powder).
  5. You can use canned or pre-roasted beets in this recipe if you don’t want to cook your own.
