Green bean casserole is a classic holiday side dish. Tender green beans get cooked in a creamy sauce and then baked with a crunch fried onion topping.

Most traditional recipes use a dairy base like regular cream of chicken or cream of mushroom soup. This version either uses my homemade gluten-free dairy-free cream of chicken soup, or a mixture of coconut milk and broth.

  • Olive oil and flour make a roux to help thicken the dairy-free sauce. Use a gluten-free baking flour like Bob’s 1-to-1 Gluten-Free Baking Flour. You could also use almond flour if you want to make this recipe grain-free as well.
  • Store-bought French fried onions add that classic crunchy onion topping that is part of any classic green bean casserole. Look for gluten-free versions if necessary.

Recipe Steps

Step One

Preheat your oven and pour your bag of frozen green beans into your casserole dish.

Step Two

Make your mushroom cream sauce to go over the casserole. Use a large skillet over medium heat to sauté the mushrooms.

Step Three

Pour the sauce over the green beans.

Step Four

Top the casserole with your crispy fried onions and bake for 45 minutes.

Let your green bean casserole cool for a few minutes and serve warm.

Recipe Tips

  • If you don’t have my recipe for dairy-free cream of chicken soup on hand, you can replace the coconut milk and chicken broth in this recipe for 1 1/4 cups of the soup. Don’t use the version from the Campbell soup company as it contains dairy.
  • Look for packaged French fried onions in the condiments section of most grocery stores. You can even find gluten-free fried onions these days. 
  • Store leftovers in an airtight container or cover the casserole dish tightly with plastic wrap for up to 4 days. Reheat before serving.

Is this recipe gluten-free?

It is as long as the fried onions are gluten-free.

Can I make this ahead of time?

You can prep this recipe ahead of time and then bake it off right before serving.

Can you freeze green bean casserole?

The leftovers won’t freeze that well because the fried onions will get soggy.

Can I use fresh green beans instead of frozen?

Yes, but you’ll need to cut back on the cooking time to prevent the beans from burning. I have not tested this with fresh green beans. If you try it, let me know!

Can I use almond milk instead of coconut milk?

Yes, you can. The creamy mushroom sauce won’t be as rich though. You can use any kind of dairy free milk including oat milk, but canned coconut milk or cashew cream will give you the best results.

Ingredients

  • Nonstick cooking spray
  • 1 12ounce bag frozen cut green beans
  • 1 tablespoon olive oil
  • 1 cup sliced button or cremini mushrooms
  • 3 tablespoons all-purpose flour (use gluten-free baking flour if you are on a gluten-free diet)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • 1/2 cup full-fat canned coconut milk
  • 3/4 cup reduced sodium chicken broth (vegetarians or vegans can use vegetable broth)
  • 1 cup French fried onions

Instructions

  1. Preheat your oven to 400°F. Spray a 2-quart casserole dish with nonstick cooking spray.
  2. Open the bag of green beans and pour them into the casserole dish. Set the dish aside while you make the sauce.
  3. In a medium skillet, heat the oil over medium heat.
  4. Add the mushrooms and cook for 3-4 minutes, or until they start to brown.
  5. Add the flour, garlic powder, sea salt, black pepper, and coconut milk, and whisk the ingredients until the flour is dissolved.
  6. Add the broth and stir together with the other ingredients. Turn the heat off the stove and pour the mixture from the skillet over the green beans in the casserole dish.
  7. Divide the fried onions on top of the casserole and place it in the oven. Bake for 45 minutes, or until the green beans are soft and the filling is bubbling.
  8. Remove from the oven and let cool for a few minutes before serving hot.
