Recipe Steps

Step One

Heat the oil in the Instant Pot with the sauté function. Cook the onion and jalapeño in the oil for 2-3 minutes, stirring occasionally.

Step Two

Stir the garlic, pineapple, orange juice, vinegar, salt, pepper, and cumin in with the onion and jalapeño.

Turn the Instant Pot off and place the roast on top of the seasonings.

Step Three

Lock on the lid, and set the Instant Pot on high pressure for a cook time of 30 minutes. Allow the pressure to release after cooking using the natural release.

Step Four

Shred the pork before serving. Garnish as desired.

Yes. As long as the internal temperature of the meat at the thickest point is up to 145°F/63°C, it is safe for consumption.

What cut of pork roast is best for this recipe?

There are several types of pork roast; I generally get a pork shoulder roast or a pork butt roast. A pork tenderloin, Boston butt, pork loin roast, or boneless pork roast will also work. Pork belly tends to be a lot fattier, so I don’t recommend it for this recipe.

Can I use the slow cooker to make this recipe?

Yes! Just cook everything for 5-6 hours on high or 6-7 hours on low.

Does this recipe call for broth?

No, you will have enough cooking liquid from the pineapple juices and orange juice. Or, you can swap out the orange juice for chicken broth or beef broth. It’s up to you.

Ingredients

  • 2 tablespoons cooking oil (I used avocado oil)
  • 1 onion, diced
  • 1 jalapeno, cored and diced, with seeds removed
  • 2 garlic cloves, minced
  • 1 20ounce can crushed pineapple, with the juices
  • 1/2 cup orange juice
  • 1/4 cup apple cider vinegar
  • 1 teaspoon sea salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon ground cumin
  • 2 pounds pork roast
  • Sliced green onions or finely chopped cilantro (optional, for serving)

Instructions

  1. Press the sauté button on a 6-quart Instant Pot and drizzle in the oil. Let the oil heat up for a few minutes.
  2. Then, add the onion and jalapeno and let cook for 2-3 minutes, stirring occasionally.
  3. Add the garlic, pineapple, orange juice, vinegar, salt, pepper, and cumin, and stir to combine.
  4. Cancel the sauté function and then use tongs to place the pork roast on top of the other ingredients.
  5. Lock on the lid and set the cooking time to 30 minutes at high pressure. When the cook time is complete, let the pressure come down naturally for 10 minutes. Then, use the quick release to get rid of any remaining pressure.
  6. Carefully remove the lid. Use two forks to shred the pork before serving.
  7. Serve hot, with green onions and chopped cilantro on top for garnish (optional).
