As I also discussed, red palm oil is unique because it is rich in vitamins A and E.
Any food this rich in color has to be healthy, right?
Red palm oil is safe for cooking at high temperatures, so I tried roasting some summer zucchini with it:
The flavor is mildly, mildly carrot-ey in flavor and it worked really well with zucchini and some dried herbs (recipe below):
Red Palm Oil Roasted Zucchini
Prep Time: 10 minutes
Cook Time: 45 minutes
Total Time: 55 minutes

Red Palm Oil is a healthy cooking fat that is rich in nutrition. This recipe is for Red Palm Oil Roasted Zucchini.
Ingredients
- 2 large zucchini squash, washed and chopped into bite-sized pieces
- 1 teaspoon dried oregano
- 1/2 teaspoon dried rosemary
- 1/2 teaspoon dried sage
- 2 tablespoons red palm oil, melted
Instructions
- Preheat your oven to 375 degree F.
- Line a baking sheet with parchment paper for easy cleanup.
- Toss the chopped zucchini, herbs, and melted red palm oil in a large bowl and pour onto the baking sheet.
- Bake for 45 minutes, stirring once for even cooking.
- Serve hot.
