I am a big fan of slow cooker meals. It’s just so easy to throw in a bunch of ingredients and end up with a delicious home-cooked meal.

I got two slow cookers as wedding presents and I have used them faithfully for the last two decades (my husband and I celebrated our 20th wedding anniversary this past summer)!

With this easy chicken and potatoes recipe, you literally only need three ingredients. It’s one of those perfect “set it and forget it” meals great for busy days.

  • Chicken thighs are great because they have slightly more fat than chicken breasts, resulting in more flavor. They’re also usually cheaper than chicken breasts too, but you can use either. I used boneless chicken thighs that were also skinless.
  • Small potatoes such as red potatoes or gold potatoes are also budget-friendly and easy to find.
  • Prepared salsa adds the flavor in this slow cooker recipe.

Recipe Steps

Step One

Spray the crockpot with cooking spray and add salsa to the bottom.

Step Two

Wash the potatoes, place them on the salsa, and cut larger ones in half.

Step Three

Add chicken thighs on top, cover, and cook on low for 8 hours or high for 5–6 hours.

The slow cooker doesn’t always require broth or a liquid. In this case, the liquid from the salsa is enough to keep the chicken moist. But, feel free to add broth if you want more of a soup.

Yes, but you may need to add more liquid to get the pressure cooker up to pressure.

Can I use sweet potatoes instead of white potatoes?

Yes, but you may need to cut them into cubes so they get cooked through.

Ingredients

  • Nonstick cooking spray
  • 1 1/2 cups prepared salsa (you can use mild, medium, or hot)
  • 1 1/2 pounds small red or gold potatoes (equals about 8-9 small potatoes)
  • 1.25 pounds boneless, skinless chicken thighs (about 4 pieces)

Instructions

  1. Spray the inside of a medium or large crockpot lightly with nonstick cooking spray.
  2. Spoon or pour the salsa into the bottom of the crockpot.
  3. Next, wash the potatoes and pat them dry. Place them in the crockpot on top of the salsa. If the potatoes are larger than 2-inches in diameter, you can cut them in half or quarter them.
  4. Use tongs to place the chicken thighs on top of the potatoes and salsa.
  5. Place the lid on the crockpot and set to low temperature for 8 hours or high temperature for 5-6 hours.
  6. When the cook time is up, remove the lid. You can either use a serving spoon to serve the chicken pieces with the potatoes whole, or you can use a spatula to mix together the chicken, salsa, and potatoes, and serve it more like a stew.
  7. Top the mixture with your favorite toppings including chopped cilantro, extra salsa, guacamole, avocado slices, yogurt or sour cream (use dairy-free versions for dairy-free diets), shredded cheese, or sliced jalapenos (I personally love pickled candied jalapenos).
  8. Serve hot.
