I’m a big fan of the slow cooker, especially as someone who manages chronic illness. I am often tired in the evenings and don’t have a lot of energy to make a full dinner from scratch.

Slow cooker recipes are great for those of us who can’t always cook for health reasons or who don’t have time! It’s a great way to get dinner ready early in the day and so you have less work to do later. In other words, “set it and forget it.”

In this slow cooker salmon recipe, I used simple ingredients that result in tender cooked flaky fish with a sauce made from lemon juice, garlic, olive oil, salt, and black pepper.

  • Use fresh salmon for this recipe. I like to buy frozen wild salmon and then defrost i in the fridge the day before to give it plenty of time to defrost. I prefer to use wild salmon, not farmed Atlantic salmon.
  • Lemon juice, white wine, and a touch of olive oil are all you need to keep the fish moist while it cooks.

Recipe Steps

Step One

Add the salmon filet pieces to the bottom of the slow cooker.

Step Two

Add the garlic, wine, lemon zest, and lemon juice, shallots, olive oil, dill, salt and pepper to the crockpot.

Step Three

Put on the lid and set the time to 2 hours on low.

Step Four

When the cook time is up, you can remove the cooked salmon to a serving dish.

Then, pour the liquid from the crockpot into a small saucepan and heat over medium heat on the stovetop. Reduce the liquid for 3-4 minutes and then pour over the salmon.

Serve warm with your preferred sides.

Recipe Tips

  • This recipe is not easily doubled as the fish will likely overlap and will not cook properly.
  • You can use other dried herbs in place of dried dill including dried thyme. 
  • The salmon is great served with steamed white rice or brown rice that can help soak up the sauce. It also goes well with a side of steamed veggies to make it a balanced meal. 
  • Store leftover salmon in an airtight container in the fridge for up to 4 days.

Ingredients

  • Nonstick cooking spray
  • 4 salmon fillets with skin (about 6 ounces each)
  • 2 garlic cloves, minced
  • 1/2 cup white wine
  • 1 lemon, zested
  • 1 lemon, juiced (about 3 tablespoons of juice)
  • 4 shallots, sliced
  • 2 tablespoons olive oil (you can also use avocado oil)
  • 1/2 teaspoon dried dill
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Spray the bottom of a medium-sized crockpot lightly with nonstick cooking spray.
  2. Then, use tongs to place the salmon pieces skin-side down in the bottom of the pot.
  3. Add the garlic, wine, lemon zest, and lemon juice, shallots, olive oil, dill, salt and pepper to the crockpot.
  4. Put on the lid and set the time to 2 hours on low.
  5. When the cook time is up, you can remove the cooked salmon to a serving dish.
  6. Then, pour the liquid from the crockpot into a small saucepan and heat over medium heat on the stovetop. Reduce the liquid for 3-4 minutes and then pour over the salmon.
