Beet Ginger Juice is made with fresh raw beets, ginger, lemon, and either apple or carrot for sweetness. Everything goes into a juicer, or you can blend it with water and strain it if you don’t have a juicer.
The flavor is earthy from the beets, spicy from the ginger, and balanced by the citrus, and it takes only a few minutes to make from start to finish.
I’ve made variations of this juice for years because it’s one of the easiest ways to use up fresh beets. When I first started juicing, this was one of the recipes I kept coming back to thanks to that clean, bright flavor. It’s become one of my staples, especially when I want something simple but fresh tasting.

Recipe Steps

Step One: To make beet ginger juice in a blender, combine the ingredients, plus water. If using a juicer, simply run the ingredients through your juicer.

Step Two: Blend until smooth and then strain through a nut milk bag.

Step Three: Pour the juice into a glass.

Step Four: Enjoy immediately for the optimal level of nutrients.

Beet Ginger Juice Recipe
This Beet Ginger Juice recipe is quick to make, full of fresh flavor, and a great go to when you want a vibrant, refreshing drink without much prep. Learn to make it in a juicer or a blender.

Ingredients
- 2 raw beets, scrubbed clean and rinsed well (I like to cut off the stem and root)
- 1 one-inch piece fresh ginger
- 1 apple, cored
- 1 lemon, peeled
- 1 cup water, if using a blender to make the juice
Instructions
- Cut the produce into large pieces that will fit through the feeding tube of a juicer. If you will be using a blender to make your juice, then cut your produce into smaller pieces than if you are using a juicer.
- If you are using a juicer, then run the vegetable and fruit pieces through the juicer. Collect the juice in a pitcher and chill or serve immediately.
- If you are using a food processor or blender, add the beet, ginger, apple (or carrot), lemon and water to the base. Blend or process on high for 20-30 seconds, or until the mixture is smooth.
- Then, pour the blended juice through a nut milk bag, squeezing it from the top down to drain the juice into a pitcher. Discard the collected pulp, or save it and use it for another purpose.
- Serve the juice immediately.
Notes
- You can easily double or triple this recipe for more servings.
- Fresh juice is best served right after it’s made. But, it can be stored in a covered container in the refrigerator for up to 4 days.
- Feel free to use 1-2 large carrots in place of the apple, if you prefer.
