Zucchini Bread Oatmeal

If you love a hearty breakfast that tastes like Zucchini Bread, then you are really going to love this recipe. You don’t even need milk for this recipe. Instead, I used water and a ripe banana to add creaminess and a little natural sweetness.

Recipe Steps
Step One
The first step is to shred your zucchini. You can do it in a food processor using the shredding disk, or using a large cheese grater. You’ll need about 1/2 cup of tightly-packed shredded zucchini for this recipe.
Step Two
Next, just cook the oats, shredded zucchini, raisins, banana, and cinnamon. You won’t believe how good your kitchen will smell as the oatmeal is cooking.
Step Three
Stir in your protein powder and serve the oatmeal hot, topped with chopped walnuts, if desired.

- Be sure to use certified gluten-free oats, if necessary.
- You can also add chopped walnuts to the oatmeal, to give it even more authentic Zucchini Bread flavor.

You’re going to love this Zucchini Bread Oatmeal that is a healthy twist on breakfast. This recipe is gluten-free and vegan-friendly.
Ingredients
- 2/3 cup gluten-free rolled oats
- 1 small zucchini, finely shredded through the tube of a food processor (yields about ½ cup firmly packed)
- 1 ripe banana, sliced
- 1/2 cup water
- ¼ teaspoon ground cinnamon
- 2 tablespoons raisins
- 1 scoop, your favorite protein powder
- 2 tablespoons chopped walnuts (optional, for topping)
Instructions
- Place the oats, shredded zucchini, sliced banana, water, cinnamon, and raisins in a medium pot. Give the mixture a stir.
- Turn the heat to high until the mixture starts to simmer. Stir it again, cover the pot, and then reduce the heat to low and cook for about 8 minutes. Stir occasionally to prevent burning.
- Turn off the heat. Just before serving, stir in the protein powder.
- Serve immediately, with the chopped walnuts sprinkled on top.
