If it’s your first time making a lemongrass brew, you’ll need to grab a sharp knife or a meat tenderizer to help bruise the fresh lemongrass stalks to bring out the most flavors.
Step One
Prepare the lemongrass by peeling, cutting, bruising, and then chopping it into pieces, and boil 4 cups of water in a pot over high heat in a small saucepan.
Step Two
Add the chopped lemongrass and ginger to the boiling water and simmer.

Step Three
Add the lemon slices to the hot water and continue simmering for a few more minutes.
Step Four
Remove the pot from the heat, strain out the solids in a fine mesh strainer, and stir in the honey. Serve hot.

- 2 to 3 stalks fresh lemongrass

- 1 one-inch piece of fresh ginger, peeled and chopped
- 1 lemon, sliced into rounds
- 2 teaspoons honey
Instructions
- Start by preparing the lemongrass. Peel away the outer layers of the lemongrass stalks to reveal the tender parts inside. Cut off the root ends and the very tops of the stalks, leaving the middle sections that are most fragrant. Bruise these sections with the back of a knife or a mallet to help release the essential oils and flavors. Then, chop the stalks into 1-2 inch pieces.
- In a medium-sized pot, bring 4 cups of water to a boil.
- Once the water is boiling, add the chopped lemongrass and ginger.
- Reduce the heat to low, cover the pot, and let the mixture simmer for about 6-8 minutes.
- A few minutes before removing the pot from the heat, add the lemon slices to the mixture.
- After simmering, take the pot off the heat and strain the tea to remove the lemongrass pieces, ginger, and lemon slices. Stir in the honey.
