Description
These Gluten Free Apple Muffins with a Crumble Topping are absolutely divine! They are lightly sweetened with coconut sugar with lots of chunky apple flavor.

- Nonstick cooking spray
- 1 1/2 cups gluten-free flour (for grain-free, use cassava flour)
- 1/2 cup coconut sugar
- 1 teaspoon ground cinnamon
- 2 teaspoons baking powder
- 1 cup chopped apples (from about 2 medium apples)
- 1/2 teaspoon sea salt
- 1/4 cup butter, ghee, or vegan butter, melted*
- 1/4 cup applesauce
- 2 eggs, beaten
- 1/2 cup unsweetened almond milk
- 1 teaspoon vanilla extract
- For the crumble topping:
- 2 tablespoons butter, ghee, or vegan butter, melted
- 1/4 cup + 1 tablespoon gluten-free flour
- 1/4 cup + 1 tablespoon coconut sugar
- 1/2 teaspoon ground cinnamon
Instructions
- Preheat your oven to 375°F and lightly spray a muffin tin with the cooking spray.
- In a medium bowl, combine 1 1/2 cups of the flour, 1/2 cup of coconut sugar, 1 teaspoon of cinnamon, baking powder, chopped apples, and sea salt. Stir to combine.
- Then, add to the mixing bowl the melted butter or ghee, applesauce, eggs, almond milk, and vanilla extract.
- Stir to combine and divide the mixture between 12 muffins wells.
- Then, in a small bowl, combine 2 tablespoons of melted ghee or butter, 1/4 cup + 1 tablespoon of gluten-free flour, and 1/4 cup + 1 tablespoon of coconut sugar. Use a spatula to stir together.
- Use a small spoon or your fingers to divide the crumble topping between the tops of the muffins.
- Bake for 35 minutes, or until the top of the muffins have turned a golden brown.
- Remove the baking sheet from the oven and let the muffins cool for a few minutes before removing them from the muffin tin.
- Serve warm or at room temperature.
Notes
- *use vegan butter for dairy allergies.
- Store any leftover muffins in a tightly-sealed container in the refrigerator for up to 5 days. Reheat before serving.
- You can use whatever type of apples you like in this recipe. I prefer a sweet red apple like Fuji or Honeycrisp.
- VEGAN: use vegan butter and an egg replacer.
