Air Fryer Roasted Delicata Squash
This Air Fryer Delicata Squash recipe is so simple and delicious. The squash is easy to make, and goes with almost any main dish. Best of all, it’s ready in just 25 minutes!
If you’ve never had Delicata squash, then you must try and find one immediately. Although I personally love all squashes, Delicata is one of my favorites. Look for it at most grocery stores starting in September in North America.
It is classified as a winter squash, and it has a slightly sweet and pleasant flavor when roasted.
Delicatas are generally have yellow skin, but I’ve also seen them with white skin. They always have the characteristic oblong shape with orange or green stripes running lengthwise.

- Use your air-fryer to make this easy side dish recipe if you don’t have space in your oven, or you don’t want to heat up your entire oven.
- You only need 15 minutes cooking time for this simple roasted Air Fryer Delicata Squash recipe.
- Increase the cooking time to 30 minutes if you want to make this in a regular oven.
- Don’t worry about peeling a Delicata squash. The peel is thin and edible.
Recipe Steps
Step One
The first step to making Air Fryer Delicata Squash is to cut the squash in half lengthwise.
Fortunately, most Delicata squash are fairly easy to cut when using a sharp Chef’s knife.

Step Two
Use a spoon to scoop out the seeds. Then, turn the squash cut side down on a cutting board and slice it into 1/2-inch slices. I like to make these half moons.
Place the sliced squash in a medium mixing bowl.
Step Three
Toss the squash with one teaspoon of melted coconut oil and transfer it to the basket of your air fryer. You can also use melted butter, olive oil, or ghee.
It’s okay if the squash rings overlap a bit in the basket of the air fryer and aren’t in a single layer.
You can also feel free to add seasonings such as salt, black pepper, garlic powder, pumpkin pie spice, cinnamon, or any other dried herb like oregano or basil.
Step Four
Set the temperature to 400 degrees F for 15 minutes.
If you are using a regular oven, then place your cubes on a baking sheet and bake for 30-35 minutes at 400 degrees F.
Step Five
Once your squash is fully cooked, the squash will be slightly browned.
You can sprinkle a pinch of salt and pepper on top and serve them warm.

Ingredients
- 1 Delicata squash
- 1 teaspoon coconut oil, melted (see notes for alternatives)
- 1/2 teaspoon sea salt
- 1/4 teaspoon ground black pepper
Instructions
- Wash the squash and pat it dry. Then, use a Chef’s knife to cut the squash in half lengthwise.
- Use a spoon to scoop out and discard the seeds.
- Then, turn the squash cut side down on a cutting board and slice it into 1-inch slices. Place the sliced squash in a medium mixing bowl.
- Toss the squash with the coconut oil and transfer it to the basket of your air fryer.

My question is though – What can I use instead of Coconut Oil? First, because I don’t have any and second I am not a fan of Coconut OIl.
