Ground Bison and Cauliflower Bowl

To make this recipe grain-free and paleo, I used cauliflower rice and chopped kale to add texture to the bowls.

If you’ve never cooked with bison before, then this is a great recipe to make. Ground bison is very similar to ground beef, although it tends to be even leaner than beef and chicken too!
Why You Need This Recipe

Key Ingredients
- Olive oil – Use olive oil to sauté the onion and cauliflower rice. Butter, ghee, coconut oil, or any neutral flavored oil works well too.
- Onion – Onions have a strong and pungent flavor when raw. Once cooked, they mellow and sweeten in flavor. White, sweet, or yellow onions are all great options.
- Cauliflower rice – You can buy cauliflower rice or make your own. It can usually be found in the frozen foods with the other frozen veggies.
- Ground bison – One 4-ounce serving of ground bison delivers only 124 calories and 6 grams of fat. It’s high in iron, selenium, vitamin B12 and zinc. It’s a great way to boost the nutrients in any meal. If you can’t find ground bison, lean ground beef will work in its place. - Spices – Don’t forget to season! Oregano, turmeric, salt, and pepper add plenty of flavor to the meat and cauliflower rice.
- Kale – Kale is a delicious superfood that’s packed with vitamin C. It has sturdy leaves that still have texture when cooked. You can buy it pre-chopped if you want to cut back on prep time.

Recipe Steps
Step One
Heat up the oil in a large skillet. Add the onion and cauliflower rice and stir to combine.

Step Two
Add the ground bison and stir it together with the onion and cauliflower.
Step Three
Add the dried herbs and spices, along with the chopped kale.
Step Four
Cover the skillet and let the ingredients cook a bit longer until the bison is cooked through and the kale is wilted.
This dish is best served right out of the pan.
If you want to get creative, you can serve it on top of jicama tacos with salsa and guacamole. Or, you can just serve this ground bison recipe with the vegetables. Either way, it is so delicious!

- If you can’t find ground bison at your local grocery store, try a specialty foods store like Whole Foods Market or your local butcher.
- Be careful not to overcook the cauliflower rice. If you cook it too long, it can get soft and soggy.
- If you aren’t on a Whole30 or paleo diet, you can use pre-cooked rice in place of the cauliflower rice.
- Ground bison tends to have a mild flavor compared to other game. If you’re concerned it will taste too gamey, you can substitute ground beef for the bison.

Bison tastes a lot like beef, but the flavor can vary by manufacturer. If you are super sensitive to a gamey flavor, then you might not like bison, but I find the flavor to be very mild. I have even had bison that has a sweetness to it.

It depends. Bison can sometimes have a lower saturated fat content and higher protein content. I consider bison from a quality source to be as healthy as grass-fed, grass-finished beef. Learn more about why bison is healthy.

Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 1 cup cauliflower rice (see notes if using frozen cauliflower rice)
- 1 pound ground bison
- 1 teaspoon dried oregano (or Italian seasoning)
- 1 teaspoon dried turmeric
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 cup chopped kale
Instructions
- In a large skillet over medium heat, pour in the the olive oil. Let the oil heat up for a minute or so.
- Add the onion and cauliflower rice, and stir to combine. Cook for 2 minutes.
- Add the bison and use a spatula to break up the pieces as it cooks.
- Sprinkle in the oregano, turmeric, salt, and pepper, and stir to combine. Let the mixture cook for about 3 more minutes.
- Add the kale, reduce the heat to low, and cover the skillet. Cook for 1-2 more minutes, or until the bison is cooked through.
- Turn the heat off and serve the bison mixture hot.
Notes
- You can substitute lean ground beef for the bison, if you prefer.
- I used fresh cauliflower rice (not frozen) in my recipe. If you want to use frozen cauliflower rice, just cook it a bit long when you cook it with the onion (about 4 minutes).

this looks and sounds nutritious and delicious … I have to tell you, I too have added meat back into my diet too … the reason: I just couldn’t stay healthy without it … I refuse to take supplements … I just loathe taking pills and things … I’ve never attached myself to a label, but I was most associated with a nutritarian, vegan and vegetarian … if I had to pick a label, it would not be a strict nutritarian, but more of a free-spirited nutritarian! … that is, I eat like a nutritarian at most meals, but I do eat a serving of beef or chicken once or twice a week … that and orange juice have kept me illness free, so far, all winter … overall, I eat as healthfully as possible without driving myself (and others around me!) mad, and I do have an eye for eating quality, humanely raised and slaughtered meats … thanks for sharing this recipe … I’m looking forward to trying it … and searching the market for “bison”!
