Step One

Wash all of your produce, and peel the ginger and lemon.

Cut all the simple ingredients into pieces small enough to fit through the feeding tube of your juicer or into small chunks if you use a blender.

Try to avoid using the apple seeds.

Step Two

Add the ingredients to your blender or juicer. Add water if you’re using a blender.

Step Three

Run through the juicer per directions, or blend until smooth.

Step Four

Strain the juice through a fine cheesecloth, fine mesh strainer, or nut milk bag to remove any of the fibrous materials.

Serve immediately or store the juice covered in an airtight container the fridge. 

This fresh apple juice is best served chilled or at room temperature, depending on your taste preferences.

Yes, you can swap the baby spinach for kale. Both are rich in antioxidant vitamins. However, it will taste different. Kale is not as sweet and tender as baby spinach and may not please your taste buds as much. 

Can I sweeten this green juice?

I’d recommend trying it a few times before you begin to sweeten this juice. The apples in the juice will add quite a lot of sweetness to it, but if you really don’t like the taste of it but want the nutrition, you can add a little honey, stevia, agave, or maple syrup to the juice.

Ingredients

Units Scale
  • 2 green apples, cored and sliced
  • 1 medium cucumber
  • 1 cup baby spinach (about 1 large handful)
  • 1/2 lemon, peeled
  • 1-inch piece of fresh ginger, peeled
  • 1 cup of water (if you’re using a blender)

Instructions

  1. Core the green apples and cut them into large pieces that will fit through the feeding tube of a juicer. If you use a blender to make your juice, cut your produce into smaller pieces than if you are using a juicer.
  2. If you use a juicer, run the vegetable and fruit pieces through the juicer. Collect the juice in a pitcher, and serve immediately.
  3. If you are using a food processor or blender, add the green apples, cucumber, baby spinach, lemon, ginger, and water to the base. Blend or process on the highest setting until the mixture is smooth, or for 20 – 30 seconds. 
  4. Pour the blended juice through a fine cheesecloth or a nut milk bag. Squeeze it from the top down to drain the juice into a pitcher. You can discard the collected pulp, or save it and use it for another purpose.
  5. Serve your Green Apple Juice immediately.
