Why Air Frying?

I am getting more adapt at using my air fryer, and I turn to it several times a week now. It’s great because:

  • you don’t have to heat up the kitchen
  • you can use less oil than you would normally use to roast foods
  • and it’s perfect for small or medium batches of foods

And, the air fryer is perfect for making roasted potatoes. They turn out so crispy and perfect, just like breakfast potatoes should be.

Recipe Steps

Step One

The first step to cooking potatoes in the air fryer is to grab about 4-5 medium red, yellow, or white potatoes.

As you can see, I used potatoes that were starting to sprout. But, with everything that we’re going through right now, we can’t waste food, right? So, I just scrubbed them well before chopping them into 1-inch pieces.

Step Two

After you’ve chopped up your potatoes, add them to a mixing bowl. You can also chop up one bell pepper and half of an onion, if you have them on hand.

Step Three

Next, toss the ingredients with about 2 tablespoons of olive oil. While some people claim you don’t need any oil when using the air fryer, I have not had good results without using at least a little bit. In this case, I recommend using 2 tablespoons to ensue that the potatoes get nice and crispy.

Step Four

Add the ingredients to your air fryer basket and cook them at 400 degrees for 25 minutes. Enjoy hot.

Recipe Tips

  • You can use whatever potatoes you have on hand, including white potatoes, gold potatoes, or red potatoes.
  • This recipe doesn’t work as well with sweet potatoes as they tend to burn.
  • You can add whatever seasonings you like. I like to keep it simple with just salt, pepper, and garlic powder. Dried chopped rosemary or thyme would be excellent, too.

Ingredients

  • 5 medium white, gold, or red potatoes, scrubbed and cut into 1-inch pieces
  • 1 yellow, orange, or red bell pepper, cut into ½-inch pieces
  • ½ onion, chopped
  • 2 tablespoons olive oil
  • ¼ teaspoon garlic powder
  • ½ teaspoon sea salt
  • ¼ teaspoon ground black pepper

Instructions

  1. In a large mixing bowl, combine the potatoes, bell pepper, onion, oil, garlic powder, salt, and pepper. Stir to combine.
  2. Pour the ingredients into the base of an air fryer.
  3. Set the temperature to 400°F and set the timer to 25 minutes. Shake the basket once during the cooking process to make sure that the potatoes get cooked evenly.
  4. Serve hot. 

Notes

Store any leftovers in a tightly sealed container in the refrigerator for up to 4 days. Reheat in a dry pan on the stovetop until hot.
