Recipe Steps

Air fryer twice-baked potatoes seem fancy, but they’re very simple to make. Let me show you how!

Step One

Use a fork to poke holes in the potatoes. Use your hands or a clean towel to rub oil all over the potatoes.

Step Two

Place the oiled potatoes into the basket of your air fryer. Set the temperature to 400 degrees Fahrenheit for 35 minutes.

Step Three

Use tongs to transfer the hot potatoes to a cooling rack. Let them cool for a few minutes then cut through them lengthwise.

Use a spoon to scoop out the insides of the potato into a medium bowl. Add the shredded cheese, sour cream, bacon, and seasoning to the bowl. Mix everything together well.

Step Five

Use the spoon to divide the mixture back into the skins of the potatoes. Place the filled potatoes back into the air fryer basket. Cook for 5 minutes at 400 degrees Fahrenheit to ensure the filling heats through.

Yes, I prefer the air fryer because it’s quicker and doesn’t heat up the kitchen but the oven works great too! Cook the potatoes at 400 degrees until fork tender, about 60 to 70 minutes. Stuff the potatoes as directed and then cook for another 5 minutes to heat through.

How long does it take to cook potatoes in the air fryer?

Russet potatoes take about 35 to 40 minutes to cook in the air fryer depending on their size. Start at 35 minutes and if the potato isn’t ready then add five minutes.

  • 3 pieces cooked bacon, crumbled (leave off for vegan or vegetarian diets)
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • 6 fresh chives, diced (for topping)

Instructions

  1. Use a fork to poke a few holes in each of your potatoes. This will ensure that they get cooked through.
  2. Then, use your hands or a clean paper towel to spread the oil over each of the potatoes. This helps the skins get crispy.
