Recipe Steps

Step One

Peel and slice the pineapple into rounds using a sharp knife or a pineapple corer. Be sure to remove all of the outer skin of the pineapple. Then, carefully cut out the core so you have rings.

Step Two

Combine the coconut oil with the cinnamon and brown sugar in a small bowl.

Step Three

Coat pineapple rings in the sugar mixture.

Can I cook these all at once?

As you can see in the photo, I can only fit 3 rings in my air fryer basket. It depends on the size of both your air fryer and your pineapple as to how many you can cook at once.

Do I need to use fresh pineapple in this recipe?

You can also use canned! You’ll just want to dry them well with a paper towel to get rid of the excess moisture so the coating sticks.

Can I use pineapple chunks instead of rings?

Yes, you can. But, I prefer the rings because they are usually thinner than the chunks and have the best texture for air fryer. Don’t use pineapple niblets or pineapple pieces because they will be too small and may burn or fall through the air fryer basket.

Can I use maple syrup instead of brown sugar?

It’s best to use a granulated sweetener like brown sugar, coconut sugar, or maple sugar in this recipe as opposed to a liquid sweetener. The dry granulated sweetener helps form the sweet crust on the top of the pineapple which is just so yummy.

  • 1 tablespoon coconut oil, melted
  • 2 tablespoons brown sugar (or coconut sugar)
  • 1/2 teaspoon ground cinnamon
  • 1 cup prepared whipped cream (use a dairy-free version for vegan diets)

Instructions

  1. Place the pineapple slices in a medium mixing bowl and set aside.
  2. Then, in a small bowl, combine the coconut oil, brown sugar, and cinnamon. Stir gently to combine.
  3. Pour the coconut oil mixture over the pineapple slices. And stir gently to coat the pineapple
  4. Lay the pineapple slices in your air fryer basket, trying to keep the slices from touching each other.
  5. Set the temperature of your air fryer to 375 degrees F for 8 minutes.
  6. Use tongs to flip the slices and cook for an additional 6-8 minutes, or until the pineapple slices start to brown and caramelize.
  7. Serve immediately, with a dollop of whipped cream on top.
