For busy weeknights, here’s an easy and delicious Keto Crockpot Chicken Thighs & Cabbage recipe that your family will love! This one-pot meal pairs flavorful chicken thighs with tons of veggies. This recipe is low-carb, Whole30, paleo, gluten-free and dairy-free.
Whenever I’m craving a low-carb meal with extra protein and fiber, I turn to this Keto Chicken Thighs recipe that includes cabbage and cauliflower.
You only need a few minutes prep time, so this is the perfect recipe for a busy day.

- This easy slow cooker chicken recipe takes only 5-6 hours on high to cook through, or you can cook it for 8-10 hours on low heat. You can use chicken thighs (bone-in or boneless) or chicken cutlets, whichever you prefer.

Key Ingredients

- Cauliflower rice is really easy to find these days. But it riced in a bag to make your life easy. Or, you can make your own cauliflower rice using a food processor. You could also use frozen cauliflower (see my guide for how to freeze cauliflower).
- Cabbage is also budget-friendly and can be found year round. You can even use frozen cabbage (see my guide for how to freeze cabbage).
- Chicken broth adds flavor and helps keep the chicken from drying out.

Recipe Steps
Step One
Chop your cabbage and place it in the bottom of your crockpot. Then, spread the cauliflower rice on top of the cabbage.
One of other reasons I like using a slow-cooker is that it’s made from ceramic which is one of the safest materials for cookware.
Step Two
Place the chicken on top of the veggies and add the broth and seasonings.
Step Three
Put the lid on the slow cooker and set the timer to 6 hours on high heat. You can also cook it for 8-10 hours on low heat.
Step Four
Once the cooking time is up, remove the lid, stir the ingredients, and serve hot.

- You can use bone-in or boneless chicken thighs in this recipe. You can also use chicken breasts, if you prefer.
- Use green cabbage or red cabbage, either one is delicious.
- Feel free to get creative with your seasonings. Smoked paprika, chili powder, or curry would also be delicious.
- Store any leftovers in an airtight container in the refrigerator for up to 4 days. Reheat before serving.

Ingredients
- 1 large head of green or red cabbage, coarsely chopped
- 1 pound bag of cauliflower rice or 1 medium head of cauliflower, broken into florets and riced in a food processor
- 2 pounds bone-in (or boneless, if you prefer) chicken thighs (about 6-8 pieces)
- 1 cup chicken broth
- 1/2 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1 teaspoon sea salt
- 1/2 teaspoon ground black pepper
Instructions
- Place the chopped cabbage in the bottom of a large slow-cooker (at least 6 quarts). Add the cauliflower rice on top.
- Next, place the chicken thighs on top of the vegetables and add the broth, garlic powder, Italian seasoning, salt, and pepper.
- Cover the slow-cooker with the lid and set to cook on high for at least 6 hours (or up to 8 hours).
- Serve the chicken and veggies hot, and be sure to remove the bone before consuming.

That’s too bad! I kept the salt low in the recipe but you can definitely add more salt and pepper to taste.
