  • Cabbage makes the base of the juice. Don’t worry, juiced cabbage is not bitter or pungent. It’s actually quite mild and tasty, especially when blended with the other ingredients. You can use green cabbage or red or purple cabbage. Cabbage is part of the cruciferous vegetables family and has many health benefits. Whether you eat cabbage or drink raw cabbage juice, you’re going to get a lot of nutritional value including vitamin C and vitamin K. A head of cabbage is usually only a few dollars and has low calories. It’s one of the most nutritious vegetables you can consume.
  • Apple pairs amazingly well with cabbage and adds some natural sweetness to this juice. You can use a red or a green apple.
  • Cucumber adds more hydration to the recipe and balances the cabbage flavor.

It’s easy to use either piece of equipment. It just depends which you have on hand! If you don’t have a cold press juicer, then you can use a high speed blender with some filtered water to help it blend.

Step One

Wash and chop your veggies so they fit in a large blender or juicer.

Step Two

Add all ingredients to your chosen machine, adding water if using a blender.

Step Three

Blend until smooth or run through the juicer per directions.

Step Four

Strain through a nut milk bag, chill, and serve! The juice will have a more pleasant flavor if it is served chilled as opposed to room temperature.

  • Fresh juice is best served right after it’s made. But, it can be stored in a covered container in the refrigerator for up to 4 days.
  • This juice is very versatile! Feel free to adapt the ingredients. For instance, you can include celery instead of cucumber. Mint or lemon juice are also great additions. If you don’t want the juice to be sweet, feel free to leave out the apple. 
  • And, yes, you can use whatever type of cabbage you like to make the juice. Green cabbage will yield a green juice and red cabbage will yield a lovely red-hued juice.

Ingredients

Units Scale
  • 1/4 of a medium red or purple cabbage
  • 1 apple, red or green
  • 1 cucumber, sliced
  • 1 lemon, peeled and sliced
  • 1 1/2-inch piece of fresh ginger, peeled
  • 1 cup water (if using a blender to make the juice)

Instructions

  1. Cut the cabbage, apple, and cucumber into large pieces that will fit through the feeding tube of a juicer. If you will be using a blender to make your juice, then cut your produce into smaller pieces than if you are using a juicer.
  2. If you are using a juicer, then run the vegetable and fruit pieces through the juicer. Collect the juice in a pitcher and serve immediately.
  3. If you are using a food processor or blender, add the cabbage, apple, cucumber, lemon, ginger, and water to the base. Blend or process on high for 20-30 seconds, or until the mixture is smooth. 
  4. Then, pour the blended juice through a nut milk bag, squeezing it from the top down to drain the juice into a pitcher. Discard the collected pulp, or save it and use it for another purpose.
  5. Serve the juice immediately.
