Ingredients

  • 1 pound cooked and chilled beets (about 45 medium beets)
  • 1/4 cup non-dairy feta cheese
  • 2 teaspoons chopped almonds or walnuts
  • 1 tablespoon olive oil
  • 1 teaspoon white wine vinegar
  • 1 teaspoon lemon zest
  • 1 teaspoon lemon juice

Instructions

  1. Chop the beets into bite-sized pieces and add them to a medium mixing bowl.
