Ripe avocados make the base of this pudding. You’ll need avocados that are ripe and soft. Or, you can use frozen avocado that has been defrosted (see how to freeze avocados).

Dates and pure maple syrup help add sweetness to the pudding and mask any avocado flavor.
Vanilla extract adds complexity and depth to the pudding.
Plant milk like almond milk helps the ingredients blend together. I used almond milk but you can also use oat milk, any dairy free milk, or even coconut milk. The plant milk replaces heavy cream.

Recipe Steps

Step One
Cut your avocados in half and use a spoon to scoop out the flesh.
Step Two
Add the avocado flesh into the base of a food processor bowl or a high-speed blender.

Blend the ingredients for about 30 seconds, or until smooth.

Ingredients
- 1 large ripe avocado or 2 medium ripe avocados, pitted
- 3 Medjool dates, pitted and at room temperature
- 2 tablespoon maple syrup
- 1 tablespoon cacao powder or cocoa powder
- 1/2 teaspoon vanilla extract
- 1/8 teaspoon sea salt
- 1/2 cup unsweetened dairy-free milk, I used almond milk
Instructions
- Use a spoon to scoop out the avocado from the skin. Place the avocado in the bowl of a food processor or the pitcher of a high-speed blender.
- Add the dates, maple syrup, cacao powder, vanilla extract, sea salt, and dairy-free milk.
- Process on high for about 30 seconds, or until the ingredients have fully combined and turned creamy and smooth. Scrape down the sides of the food processor or the blender, if necessary, and process another 10 seconds.
- Serve at room temperature or chilled.
