Cucumber juice is an incredibly refreshing beverage that you can make at any time of year.

Since cucumbers have such a high water content, this juice is ideal for a hot summer day. Or, this easy cucumber juice recipe is a great way to hydrate whenever you’re feeling dehydrated.

Why You Need This Recipe

  • Cucumbers are a healthy and mild-tasting vegetable and have numerous health benefits. The juice even has a little bit of natural sweetness to it. I think you’re really going to love it!
  • You can make this simple juice in a juicer or a blender. I’ve included instructions for both methods. You can even use a food processor if you like.
  • You only need two ingredients. Cucumber plus a splash of lime juice or lemon juice adds brightness and makes this a very healthy drink.

For the cucumber juice, all you need is about one and a half pounds of cucumbers.

For this healthy green juice recipe, I used only cucumbers and a fresh lime.

Cucumbers are on my list of the best vegetables to juice.

You can use any type of cucumber you like including English cucumbers. My cucumbers yielded about 12 ounces of fresh cucumber juice.

Recipe Steps

I use an Omega masticating juicer to make all of my green juicers, but you can always use a blender combined with a nut milk bag to make green juices without a juicer. Let me show you how easy it is to make using a blender or a juicer.

Step One

Wash and prep your veggies.

To make this cucumber juice in a blender, simply combine the ingredients in the pitcher of a high-speed blender, along with 1/4 cup of water. You can also use a food processor if you like.

Step Two

Feed the cucumbers through the juicing tube of a juicer.

If using a blender, blend the ingredients until smooth.

Step Three

Blend and then strain the juice through a nut milk bag or a fine mesh sieve to get rid of the pulp (or save it and make green juice crackers).

Step Four

Serve your cucumber juice immediately. It looks pretty served in a mason jar or pretty glasses with some fresh cucumber slices on the rim.

Green juices in general are best served right after they are made.

Recipe Tips & Substitutions

  • You can use whatever type of cucumber you like including English or Persian. You also do not have to peel the cucumbers before juicing them.
  • Use lemons instead of limes for a simple cucumber lemonade (add some lemon zest to pump up the lemon flavor even more). Feel free to add other fruits or vegetables to your juice mixture to change it up. Green apples would add more natural sweetness. Celery juice would add more fiber. Fresh ginger would add a bit of a spicy kick.
  • Store any leftover juice in a covered container in the refrigerator for up to 2 days.

Recipe FAQs

What type of cucumbers should I use?

You can use regular or hothouse cucumbers. There is a price difference between them. The hothouse are usually wrapped in plastic as their skin is softer and more easily damaged; they are also generally seedless. You can try a batch with each type and see which taste you prefer.

Should I buy organic cucumbers to juice?

This is a personal decision, but because juicing uses the entirety of the vegetable (especially when using a blender vs a juicer!) you might want to go with organic. Whatever you choose, make sure and look for unblemished cucumbers or fruit and wash very well.

Can cucumber juice help with weight loss?

If you swapped out cucumber juice for sugar-sweetened beverages like soda, then there is a good chance that this low calorie cucumber juice recipe could help you lose weight. Read more about potential juice cleanse benefits.

But, cucumber juice likely also has other health benefits including being a source of vitamin k and antioxidants that can help fight free radicals and help with the immune system.

Do I need to drink cucumber juice on an empty stomach?

Not necessarily! You will still get all the benefits of this healthy juice by drinking it with a meal. Some people prefer to drink juices with food to help prevent fluctuations in blood sugar. It can also be easier on the digestive system to drink juices with a meal.

Cucumber Juice (Juicer or Blender)

Ingredients

  • 1.5 pounds cucumbers (about 3 medium cucumbers or 2 large cucumbers)
  • 1 lime, peeled and sliced into quarters

Instructions

  1. Wash and chop the cucumbers so they will fit through the feeding tube of your juicer. 
  2. Then, feed the cucumbers and lime slices through the juicer.
  3. Serve immediately.

Notes

  1. BLENDER INSTRUCTIONS: Combine the ingredients with about ¼ cup of filtered water in the base of a blender. Blend on high and then strain the juice through a nut milk bag.
  2. Store any leftover juice in a covered container in the refrigerator for up to 2 days.
