This refreshing Cucumber Juice recipe only has two ingredients. Serve it straight out the juicer or chilled for a cooling, nourishing green juice.
Making Cucumber Juice
Cucumber juice is an incredibly refreshing beverage that you can make at anytime of year. Since cucumbers have such a high water content, the juice is ideal for warmer days or when you’re looking to hydrate.
Cucumbers are a healthy and mild-tasting vegetable, and have numerous health benefits. The juice even has a little bit of natural sweetness to it. I think you’re really going to love it!
For the juice, all you need is about one and a half pounds of cucumbers. You can use whatever type of cucumber you like including English or Persian. You also do not have to peel the cucumbers before juicing them.
For this healthy green juice recipe, I used only cucumbers and a fresh lime. My cucumbers yielded about 12 ounces of green juice.
I use an Omega masticating juicer to make all of my green juicers, but you can always use a blender combined with a nut milk bag to make green juices without a juicer.
Wash and prep your veggies.
Feed the cucumbers through the juicing tube of a juicer.
Serve immediately. Green juices in general are best right out of the juicer. If you need to store any leftovers, place them in a tightly-sealed container and store in the refrigerator up to 48 hours.

- 1.5 pounds cucumbers*
- 1 lime, peeled and sliced into quarters
- Wash and chop the cucumbers so they will fit through the feeding tube of your juicer.
- Then, feed the cucumbers and lime slices through the juicer.
- Serve immediately.
*1.5 pounds is about about 6 small cucumbers, 3 medium cucumbers, or 2 large cucumbers.
If you don’t have a juicer, you can use a blender to make the juice. Combine the ingredients with about ¼ cup of filtered water in the base of a blender. Blend on high and then strain the juicer through a nut milk bag.
