Easy Cucumber Juice Recipe (Juicer or Blender)

Cucumber juice is an incredibly refreshing beverage that you can make at any time of year.
Since cucumbers have such a high water content, this juice is ideal for a hot summer day to beat the summer heat. Try this easy cucumber juice recipe as a great way to hydrate whenever you’re feeling dehydrated.
This fresh juice also is great for a low calorie diet since it’s low in natural sugars.
Recipe Benefits
- Cucumbers are a healthy and mild-tasting vegetable and have numerous potential health benefits (see my related article on the Health Benefits of Cucumber Juice). The juice even has a little bit of natural sweetness to it. I think you’re really going to love it!
- You can make this simple juice in a juicer or a blender. I’ve included instructions for both methods. You can even use a food processor if you like.
- You only need two ingredients. Cucumber plus a splash of lime juice or lemon juice adds brightness and makes this a very healthy drink.
Ingredients
- For 100% cucumber juice, all you need is about one and a half pounds of cucumbers. For this healthy green juice recipe, I used only cucumbers and a fresh lime. Cucumbers are on my list of the best vegetables to juice and are also on my list of the best juice ingredients for bloating.
- You can use any type of cucumber you like including English cucumbers or Persian cucumbers. My cucumbers yielded about 12 ounces of fresh cucumber juice. And, if you have too many cucumbers and can’t juice them all before they go bad, see my guide for how to freeze cucumbers.

Recipe Steps
Let me show you how easy it is to make this homemade cucumber juice using a blender or a juicer.
Step One
Wash and prep your veggies.
To make this cucumber juice in a high-powered blender, simply combine the ingredients in the pitcher of a high-speed blender, along with 1/4 cup of water. You can also use a food processor if you like.

Step Two
If using a juicer, feed the cucumbers through the juicing tube of a cold press juicer.
If using a blender, blend the ingredients until smooth.
Step Three
Blend and then strain the juice through a nut milk bag, a fine mesh strainer, or fine mesh sieve to get rid of the pulp (or save it and make green juice crackers).
Step Four
Serve your cucumber juice immediately or chill and serve. I like to pour it over ice cubes on a hot day. It looks pretty served in a mason jar or pretty glasses with some fresh cucumber slices on the rim.
Green juices in general are best served right after they are made for the most nutritional benefits.

- You can use whatever type of whole cucumber you like including English or Persian. You also do not have to peel the cucumbers before juicing them.
- Use lemons instead of limes for a simple cucumber lemonade (add some lemon zest to pump up the lemon flavor even more). Feel free to add other fruits or vegetables to your juice mixture to change it up. Green apples would add more natural sweetness. Celery juice would add more fiber. Fresh ginger would add a bit of a spicy kick.
- Store any leftover juice in a covered container in the refrigerator for up to 2 days.
Recipe FAQs
You can use regular or hothouse cucumbers. There is a price difference between them. The hothouse are usually wrapped in plastic as their skin is softer and more easily damaged; they are also generally seedless. You can try a batch with each type and see which taste you prefer.
This is a personal decision, but because juicing uses the entirety of the vegetable (especially when using a blender vs a juicer!) you might want to go with organic. Whatever you choose, make sure and look for unblemished cucumbers or fruit and wash very well.

- 1 lime, peeled and sliced into quarters
Instructions
- Wash and chop the cucumbers so they will fit through the feeding tube of your juicer.
- Then, feed the cucumbers and lime slices through the juicer.
- Serve immediately.

How about using the pulp to make tzatziki sauce? With just the pulp you wouldn’t have to worry about squeezing the liquid out of the cucumber bits before adding to the yogurt. I wonder if the pulp would have enough flavor in it, though.
That is soooo smart! A great idea. It wouldn’t have as much flavor or liquid, but it’s a great option as opposed to throwing it out.
