This Watermelon & Kale Green Juice is a surprisingly sweet and refreshing green juice combination, especially during the heat of summer.

What is Watermelon Juice?

Watermelon juice is made by either blending or juicing the flesh of the watermelon. But, did you know that you can also juice the rind of the watermelon? I wouldn’t suggest eating watermelon rind because it is very fibrous and doesn’t have much flavor, but the nutritional properties of watermelon rind make it ideal for juicing.

Also, in case you were wondering, you can juice the watermelon seeds! The seeds are also high in nutrition. I always recommend using organic produce for juicing, by the way. It’s especially important in this case where you are juicing the rind.

Recipe Steps

Since the flesh of the watermelon is so sweet, I find the combination of juicing watermelon flesh, watermelon rind, kale, cucumber, and a lime to be absolute perfection.

Unfortunately, by adding the kale in the juice mix, it turns the juice green, but you will definitely taste the watermelon when you drink it. The sweetness of the watermelon covers any of the bitterness from the kale and watermelon rind.

What are the benefits of watermelon juice?

Watermelon itself is high in the antioxidant lycopene. Watermelon juice has been shown to reduce oxidative stress. Watermelon has tons of research showing its health benefits. It can even help treat erectile dysfunction!

Watermelon & Kale Juice

The combination of sweet watermelon, plus cucumber, kale, and lime juice works perfectly in this healthy juice.



  • 1/4 medium watermelon rind and flesh, cut into narrow strips to fit through a juicer feed
  • 1 medium cucumber
  • 1 bunch of kale, including stems (lower portion chopped off and discarded)
  • 2 limes, skin cut off and discarded


  1. Feed all ingredients through the feed of a juicer, alternating softer and harder textures.
  2. Enjoy immediately.


You can store any leftover juice in a tightly sealed container for up to 48 hours.
