Watermelon Juice with Lime & Mint

Recipe Steps
If you have a decent blender, preferably a high-speed blender, you can make watermelon juice in 15 seconds. You don’t need to add water or anything, you simply just blend the watermelon chunks until they are liquified.
This recipe is made a little bit fancy by adding the juice of a fresh lime and some fresh mint leaves. If you like the flavor of watermelon, then you are going to absolutely love this fresh watermelon juice.
Step One
Chill your watermelon in the refrigerator. Then, cut it in half and cut off the rind. Cut the watermelon flesh of half of the watermelon into large chunks. Store the other half of the watermelon for another use.
Step Two
Combine the watermelon chunks, lime juice, and fresh mint in the base of your blender.
Step Three
Blend the watermelon chunks until they are liquified. This should only take between 15-30 seconds in a good blender.
Step Four
Pour the juice through a fine-mesh colander into a large bowl. This will get rid of any pulp from the watermelon.
Step Five
Serve the watermelon immediately, or store it in the refrigerator until you are ready to serve.

Can this recipe be made in a juicer?
Yes, absolutely, but I personally think it can be made much faster in a blender.
Do I really have to strain the juice?
No, you don’t, but it will be a little bit thick if you don’t strain it.

Ingredients
- 8 cups chopped watermelon (from about ½ of a large watermelon), chilled*
- 1 lime, juiced
- 6 fresh mint leaves
Instructions
- Combine the watermelon chunks in the base of a high-speed blender. Add the lime juice and mint leaves.
- Blend on high for about 15 seconds, or until the ingredients are smooth.
- Place a fine-mesh colander over a large bowl, and pour the juice through the colander. Use a spatula to push the juice through the colander.
- Discard the pulp and pour the juice from the bowl into a pitcher.
- Serve immediately.
Notes
*If you can, place your watermelon in the refrigerator for several hours so it is chilled. Then, cut the watermelon in half and cut the flesh away from the rind to make the watermelon chunks.
Store any leftover juice in the refrigerator for up to 4 days.
