One of the best foods to eat in summertime is fresh corn on the cob.

If you get it straight from the farm, it will often come with the husks still on. Sweet tender corn is delicious when it is cooked and served right out of the pot.

Corn is high is carbohydrates and starch, and includes a nice amount of fiber. Many cultures rely on corn as an important part of their diets.

Another great thing about corn is how easy it is to prepare!

Corn can be boiled, steamed, or grilled until the grains become tender. My favorite method is to make Pressure Cooker Corn on the Cob (I used a 6-quart Instant Pot).

Why You Need This Recipe

  • You won’t miss standing over a hot stove waiting for a big pot of water to boil. The Instant Pot pressure cooker makes this a very easy side dish to throw together.

You only need corn on the cob and water to make this recipe.

For the ultimate fresh corn, try to find it still in the husks. If you buy it from the grocery store, you’ll likely get it with the husks removed. Try to find sweet summer corn for the best results.

Recipe Steps

Step One

If you are going to cook corn that still has the husks on, then you need to de-husk your corn. The easiest way is to tear off a small piece to get started, and then use your hands to tear off bigger chunks of the husk.

Be sure to do this over a trash can so the corn silk does not get everywhere. You can rinse the corn after you remove the husk to remove any pieces of corn silk.

Step Two

The next step is to place a trivet in the bottom of a 6-quart or 8-quart Instant Pot or any other brand of electric pressure cooker.

Then, add one cup of water to the bottom of the pot and place the corn cobs on top.

If you have a steamer basket for your Instant Pot, you can use that instead of the trivet.

Step Three

Next, lock on the lid and set the cook time to three minutes at high pressure. Make sure the valve is in the sealing position.

When the cooking time is complete, use the quick release so the corn on the cob doesn’t get overcooked.

Always be careful when using the quick pressure release so you don’t burn your fingers when you move the valve to the venting position.

Step Four

Carefully remove the lid from the Instant Pot and use tongs to transfer the cooked corn to a serving plate. Serve the corn hot or at room temperature.

You can use corn on the cob holders so you don’t burn your fingers.

  • You can serve corn on the cob with a little butter and salt, but it is also great served plain.
  • Store any leftover corn in an airtight container in the refrigerator for up to 4 days.
  • For Mexican street corn, place the cooked corn on a serving platter. Top with a sprinkle of chili powder and cotija cheese.
  • You can cook as many pieces or ears of corn as you want, but just don’t fill the pot past the “max” line.
  • If you want to cook your corn on the cob in a 3-quart Instant Pot, break the corn in half so it will fit.

Can I cook more than four pieces of corn on the cob at a time?

Yes! You can cook as many pieces of corn as you can fit in your pressure cooker without reaching the max line. You can also cook as few as one piece at a time.

Yes, but you may need to break your corn cob in half so it will fit inside the pot.

Instructions

  1. Place a trivet inside of a 6-quart or 8-quart Instant Pot.
  2. Add the water and then place the corn cobs on top of the trivet.
  3. Lock on the lid and set the time to 3 minutes at high pressure.
  4. When the cooking time is complete, use the quick release to get rid of the pressure. Then, carefully remove the lid and use tongs to transfer the corn on the cob to a serving plate.
  5. Serve warm or at room temperature.
