With warmer weather coming up over the next few months, you’ll want to have this Cucumber Smoothie recipe in your back pocket. It’s a light and refreshing combination that is mildly sweet and just perfect when you want to hydrate.
Cucumbers have a naturally high amount of water, so that’s what makes them so perfect for a smoothie. They blend easily and taste great with fresh lime juice and a touch of honey (vegans can use maple syrup).
Recipe Steps
Step One
Place your sliced cucumber, lime juice, honey, almond milk, and ice in your blender.
If you don’t want to use boxed almond milk in this recipe, you can make your own homemade almond milk. Pumpkin seed milk would also be delicious!
And, as always, please check the recipe card at the end of this post for the exact ingredients and measurements.
Step Two
Blend your ingredients on high for about 30 seconds, or until the smoothie is completely blended and creamy.
Step Three
Once you’ve blended your cucumber smoothie, then you can serve it right out of the blender.

I added frozen strawberries instead of ice cubes, MCT oil and a fresh egg. Still a little to sour for me.. Will try 1/2 avocado for a little creamier texture
