Easy Instant Pot Artichokes
This Instant Pot Artichokes recipe is so easy and healthy. You’ll love how fast it is to make them in a pressure cooker. This recipe is gluten-free and dairy-free.
Cooking artichokes in the Instant Pot is the absolute easiest way to cook this delicious, healthy vegetable. If you’re ever cooked them on the stovetop, you know that it takes forever to get them tender and cooked through.
With the pressure cooker, you literally just place the trimmed artichokes on your trivet, add some water, and set the time. When you open the lid, you’ll find perfectly steamed and ready-to-eat artichokes. I promise you it’s this easy!

Recipe Steps
Step One
Cut off the stems of the artichokes with a sharp knife. You want to base of the artichokes to be flat. You’ll also need to use the stainless steel trivet that comes with your pressure cooker. Add 1 1/2 cups of water to the bowl for steaming.
Step Two
Place the artichokes upside down (flat side side up) on the trivet. Lock on the lid.
Use the manual setting to set the cooking time to 23 minutes on high pressure for large artichokes. You can either use the manual release or the natural release. I like a really soft artichoke, so I use the natural release for at least 10 minutes.
If you are using an artichoke that is medium, you can decrease the cook time to 18 minutes. For baby artichokes, I like to cook them for just 10 minutes.

How do you serve Instant Pot Artichokes?
As far as how to serve your perfectly cooked artichokes made in the Instant Pot, my recommendation is a drizzle of olive oil, a squeeze of fresh lemon, and a sprinkle of salt and pepper. Done!
If you prefer a creamy sauce for dipping, I would recommend a paleo brand of mayonnaise. Otherwise, my motto is to keep it simple with my easy method of lemon juice, olive oil, and salt and pepper.
Or, to be honest, you can actually just eat the artichokes steamed without anything on them. They have a natural fresh wonderful flavor that I adore.
How do you eat an artichoke?
I get asked this all the time! The best way to eat an artichoke is to pull off each leaf and use your teeth to scrape or bite off the last 1/3 of each leaf. You won’t be able to eat the whole leaves because they are too tough.
Once you get to the inside of the artichoke, called the artichoke heart, you will need to use a knife or a spoon to scrape out the fuzzy part. Then, you can eat the base of the artichoke, also called the artichoke heart. That is the best part, in my opinion.
How many artichokes can I cook in an Instant Pot at one time?
You can cook about two medium-to-large artichokes in a 3-quart Instant Pot or up to four medium-to-large artichokes in a 6-quart Instant Pot.
When are artichokes in season?
Artichokes are in season from March through May in most part of the United States. In California, though, artichokes grow almost the whole year.

- 2 teaspoons extra virgin olive oil
- 1 lemon
- 1/8 teaspoon salt
- 1/8 teaspoon freshly-ground black pepper
Instructions
- Cut off the stems of the artichokes with a sharp knife so the bases are flat.
- Add the stainless steel trivet to the base of a 3-quart or 6-quart Instant Pot pressure cooker.
- Add 1 1/2 cups of water to the bowl for steaming.

I love cooking artichokes in my Instant Pot. For medium to small artichokes, I cut them in half and pressure cook them for 5 minutes, let them natural release for 5 minutes and then release the steam. They come out perfect every time.
